
The bananas in my house never make it long. This time, I saw they were mushy, so while I made dinner, I made muffins. What's important here, if you don't like to bake, is that you don't let the responsibility of everyone else's expectations overtake your sense of "I got this."
Dump all of the following into a bowl and whip it by hand with a whisk until it's lumpy, but the lumps are not flour, they're bananas and oats. Pour into muffin cups and bake at 400 until golden brown (12-15 mins; keep an eye on them). Serve!
